What is a wok?
Originating in China, woks are large, round and deep pans with a curved bottom and either handles or a stick on the side for handling. Woks are made from cast iron or carbon steel, and are known for their non-stick and quick heating when properly created.
Which is the best wok material for me?
At Spotlight we have a wonderful variety of woks for you to choose from, including:
- Carbon steel woks - a carbon steel wok will be reasonably durable and quick to heat up. This popular metal is one of the most commonly used for woks, and it's a good choice for cooks of any experience.
- Stainless steel woks - durable and able to stay hot for longer, our stainless steel woks can be used on gas or induction stoves to great effect.
- Aluminium woks - the lightest of all out woks, aluminium woks are super easy to toss food with and heat up very quickly, making them great for whipping up a quick stir fry.
Look for woks with lids if you intend on using your wok for steaming, braising or roasting, and grab a wok turner to make agitating your food inside the hot wok a breeze! Look for Scanpan, Raco or Tefal wok if they are one of your favourite cookware brands - you won't be disappointed.
How to season a wok?
Only raw carbon steel woks need to be seasoned. When seasoning your wok for the first time, spread oil over the inside and heat your wok on the stove for 60 seconds. Allow the oil to become very hot, then remove from heat, allow to cool and wipe off excess oil. Seasoning your wok will keep it in good condition and allow it to be non-stick.
How to clean a wok?
Use a gentle non-scratch scrubbing sponge and warm soapy water to clean your wok after each use. Clean the inside and outside then allow to air dry. Do not wash your wok in the dishwasher.
What can you cook in a wok?
Some great dishes to make are: fried rice, omelettes, fried noodles, pad thai, meat and vegetable stir fries and more! You can also steam dumplings, make curries and stews and sear meat in a wok.
