How do I roast meat properly?

Roasting is probably one of the easiest cooking methods out there - all you need to do is pop your delicious meat or vegetables in the oven, where they require little or no attention during the process. Always preheat your oven to the recipe's required temperature to ensure successful roasting. Use low to moderate heat for a large roast to cook your joint evenly, and remember you can always turn the oven up for a little while at the end if you are hoping for an extra crispy skin!

If you are cooking meat and hoping for the juiciest, most tender result, it is recommended that you allow the meat to stand for around an hour to help it come to room temperature before popping it into the oven.

Use butcher's twine to tie up poultry and some joints as they cook as this will help the meat to hold its shape, and a meat thermometer will help you to check when your roast is complete without overcooking it and drying it out.

All meat should rest for between 10-20 minutes after you have removed it from the oven, as this will allow the juices to redistribute through the protein.

How to cook a turkey in a roasting pan

Turkeys are big, but cooking them doesn't need to be any harder than roasting a chicken. Ensure your rack can safely hold your turkey, and be sure to pop some tasty veg like carrots, potatoes and onion underneath in the tray to cook at the same time.

Make sure to cover your turkey with foil for half the time you cook it, then uncover it for the remaining period. This ensures your bird is thoroughly cooked through, while also boasting a golden, crispy skin!
